Therefore an incorrect nutrition may lead to the occurrence of certain diseases in some individuals. The important changes occurred in our diet, particularly in the last decades, has contributed to the occurrence or to the increase in incidence of chronic diseases such as atherosclerosis, hypertension, obesity, diabetes and many types of cancers.
The genetic diversity may explain the variability in the nutritional requirements of human beings and opened a field of interaction between genetics, nutrition and environment. This concept has been taken to suggest that there are different nutritional requirements which are specific for different groups of individuals. These variations, such as due to the gender, are determined genetically and ought to be separated from variations caused by the vital cycle of individuals (pregnancy, lactation, growth and ageing). However, to study these problems we need not only basic research but also the results of clinical trials which may allow us to evaluate safely the nutritional recommendations to the general population.The use of modern methods may help us to clarify the mechanisms involved in nutrient absorption, metabolism, excretion and also in processes involved in the feeling of hunger and satiety.
In this international symposium some of these aspects will be dealt with by researchers who have contributed to clarify these questions which are of great relevance to nutrition.
